Ingredients:
1 cup kodiak mix
1 tsp baking powder
3 1/2 tsp ground cinnamon, divided
1 fresh apple, peeled and diced
1 cup plain fat free greek yogurt
1 tsp vanilla
2 tsp sugar
Instructions:
Add all ingredients (except sugar and 1/2 tsp cinnamon) into a bowl and mix together.
Turn out onto a cutting board, knead 3 to 4 times and roll shape into a 10" long loaf.
Cut loaf into 10-1 "pieces. Roll each piece into a ball and then slightly flatten.
Pre-warm air fryer at 350 degrees for 10 minutes.
Place fritters on oil sprayed parchment. Spray with oil.
Air fry for 13-15 minutes.
Make cinnamon sugar by combining the sugar and 1/2 tsp of cinnamon in a bowl and then sprinkle the fritters with it.
