4 servings (5 meatballs each)
Ingredients:
1 pound ground chicken breast
1/2 cup apple, peeled, cored and shredded
1/3 cup dried bread crumbs
1 egg
1 tsp dried sage
1 tsp dried thyme
1 tsp dried fennel seed, crushed
1/2 tsp splenda
1/2 tsp table salt
1/4 black pepper
1/8 tsp ground nutmeg
Directions:
Preheat oven to 350F. Prepare a baking sheet by lining with aluminum foil and spraying lightly with oil. Set aside.
In a medium bowl, combine all the ingredients and mix well.
Divide the mixture into 20 equal portions (heaping tablespoon) and shape with damp hands into meatballs.
Place on prepared baking sheet and bake for 25-30 minutes, flipping at 15 minutes.
