Apple Cloud Cake (0 points)

Ingredients:

1 2/3 cup unsweetened applesauce

15 gm unflavoured gelatin powder


Directions:

Add applesauce to a large heat proof bowl. Sprinkle the gelatin over the surface. Whisk until gelatin is fully incorporated. Mixture will thicken slightly.

Dissolve the gelatin in the applesauce by using the double boiler method. Place the bowl over a smaller saucepan with about 1/2" of boiling water. Mix for a few minutes until gelatin dissolves and the applesauce turns liquidy again and is warm to the touch.

Remove from stove and let cool for 5 minutes. Prepare an 9" square or round pan by lining with parchment.

Pour slightly cooled mixture into a mixing bowl and beat on high for about 15 minutes. Your mixture should turn very light in colour and look similar to whipped cream.

Scoop batter into your prepared pan, using a spatula to smooth the top. Refrigerate for 1-2 hours to set.

Use a sharp knife to cut slices. Store uneaten cake in the refrigerator.


Suggested Serving: Serve with fruit and cool whip.
