4 servings (5 meatballs each)
Ingredients:
1 pound ground chicken breast/turkey breast
1 large egg
1/3 cup cilantro or parsley, chopped
2 tbsp soy sauce
1 tsp sriracha
1 tsp minced garlic
1 tsp minced ginger
Directions:
Preheat oven to 350F. Prepare a baking sheet by lining it with aluminum foil. Spray lightly with oil. Set aside.
In a medium bowl, combine all the ingredients and mix well.
Using damp hands, form 20 meatballs (around 1 tbsp) and place on the prepared baking sheet.
Bake for 20 minutes, flipping them half way through.
Suggested Serving: Serve with fried cauliflower rice, stir fried cole slaw veggies, sugar free sweet thai chili sauce, sliced green onions and toasted sesame seeds with a squeeze of lime.
They turned out great. I used extra lean ground Turkey and the recipe made 39, using the 1 TBSP measurement per meatball. 💛💛💛
