Asian Meatballs

4 servings (3 meatballs each)
Ingredients:
1 pound ground chicken breast/turkey breast
1 large egg
1/3 cup panko breadcrumbs
1 tsp dried cilantro
1 tsp dried parsley
2 tbsp soy sauce
1 tsp sriracha
1 tsp minced garlic
1 tsp minced ginger
Directions:
Preheat oven to 350F. Prepare a baking sheet by lining it with aluminum foil. Spray lightly with oil. Set aside.
In a medium bowl, combine all the ingredients and mix well.
Using damp hands, form 12 meatballs (around 2 tbsp each) and place on the prepared baking sheet.
Bake for 20 minutes, flipping them half way through.
Suggested Serving: Serve with fried rice/cauliflower rice, stir fried coleslaw veggies, sweet thai chili sauce, peanut sauce, sliced green onions and toasted almonds/sesame seeds with a squeeze of lime.




They turned out great. I used extra lean ground Turkey and the recipe made 39, using the 1 TBSP measurement per meatball. 💛💛💛
