Baked Mini Cheesecake (1 point)

Ingredients:

1 1/2 cups plain fat free greek yogurt

2 eggs

1 tsp vanilla extract

1 tsp cornstarch

1/2 small package fat free sugar free instant pudding mix


Instructions:

Preheat oven to 350F.

Hand mix all the ingredients together.

Spray 4 muffin holes in a regular muffin tray with cooking spray.

Divide the batter evenly into the sprayed 4 muffin holes.

Bake for 30 minutes. Cool completely before removing.

Chill in the fridge for at least 12 hours prior to eating.


Suggested Serving: You can use any flavour of sugar free fat free pudding. Add-ins such as chocolate chips should be folded in prior to baking and the points added on as necessary.


Variations:

Cheesecake can also be baked in a 6" spring form pan. May need an extra 10 minutes to cook.


Lemon - substitute lemon pudding instead of vanilla, 1/2 tsp lemon extract instead of vanilla extract and add 1 tbsp lemon zest.

Pumpkin - use cheesecake or vanilla pudding and add 1/3 cup pureed pumpkin, 1/2 tsp pumpkin pie spice and 1/2 tsp ground cinnamon.

Gingerbread - use vanilla or butterscotch pudding and add 1 1/2 tbsp of splenda, 1/2 tbsp of cooking molasses, 1/4 tsp of ground cinnamon, 1/8 tsp of ground ginger and 1/8 tsp ground nutmeg.
