Baked Palmini Spaghetti Casserole (8 points)

2 servings (1/2 casserole each)


Ingredients:

4 oz cooked 90% lean beef

1 oz red bell pepper, diced

1 oz onion, diced

8 oz hearts of palm pasta, drained and rinsed

2 oz canned mushrooms, drained

8 oz canned tomato sauce

1 tsp italian seasoning

2 oz light grated parmesan cheese

2 oz light mozzarella cheese, shredded


Directions:

Preheat oven to 375F. Prepare an 8" x 8" square pan by lightly spraying it with oil. Set aside.

In a large bowl, combine all the ingredients except for the mozarella cheese. Mix well.

Pour the mixture into the prepared pan. Tope with the mozzarella cheese.

Bake for 30 minutes or until the casserole is heated through and the cheese is melted and golden brown.


Suggested Serving: Serve with a green salad.
