Balsamic Roasted Vegetables (4 points)

2 servings (1/2 mixture each)


Ingredients:

1 1/2 tbsp balsamic vinegar

1 tbsp olive oil

2 tsp minced garlic

1 tsp dried oregano

1/2 tsp dried rosemary, crushed

1/4 tsp table salt

1/8 tsp black pepper

4 oz zucchini, chopped

4 oz red onion, chopped

4 oz grape tomatoes, halved

2 oz kalamata olives, halved

2 tbsp fresh basil, chopped


Directions:

Preheat oven to 425F. Prepare a baking sheet by lightly spraying it with oil. Set aside.

In a large bowl, whisk together the vinegar, oil, garlic and the spices.

Add the zucchini, onions, tomatoes and olives. Toss well.

Pour the vegetable mixture onto the prepared baking sheet.

Bake until the vegetables are tender, 10-15 minutes.

Spoon into a bowl; stir in fresh basil. Serve hot or room temperature.


Suggested Serving: Serve with crumbled feta cheese.
