Ingredients:
3 medium bananas, ripe and mashed
2 eggs
1/4 cup applesauce
1 tsp vanilla extract
1 1/3 cup kodiak mix
4 tbsp splenda
1 1/2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp table salt
Directions:
Preheat oven to 350F.
In a large bowl, mix together the mashed bananas, eggs, applesauce and vanilla until well combined.
In a separate bowl, whisk together kodiak mix, splenda, cinnamon, baking soda and salt.
Stir the dry ingredients into the wet ingredients and mix just until combined.
Pour into a sprayed 8" x 4" loaf pan. Smooth the top.
Bake for 40-50 minutes, until an inserted toothpick comes out clean.
Variations:
Chocolate Chip - add 6 tbsp of lily's sugar free chocolate chips to the recipe (2 points per slice).
Blueberry - add 1 cup fresh or frozen blueberries to the recipe (1 point per slice).
Apple Banana Muffins - add one large shredded apple (cored, peeled or unpeeled) to the recipe and divide the batter evenly into 10 muffins. Cook at 350F for 25-30 minutes (1 point per muffin).
I have not but a few people have. I would fill 3/4s full and cook for 30 minutes.
