Black Bean Burgers (1 point)

Ingredients:

2 oz uncooked rolled oats

14 oz can black beans, rinsed and drained

1 egg

1/4 lime, juice and zest

1 tbsp ground cumin

1 tbsp soy sauce

1 tsp garlic powder

1 tsp chili powder

1/2 tsp chipotle chili powder


Directions:

Place the oats in a food processor and pulse 5 or 6 times until they are partially chopped.

Add the rest of the ingredients and pulse until most of the beans are blended.

Pour the bean mixture onto a cutting board and shape into a giant patty.

Cut into 4 pieces and shape into patties.

Freeze at least 2 hours before cooking or keep frozen until ready to cook.

Heat a sprayed skillet on medium heat and cook frozen burgers about 7 minutes on each side.


Suggested Serving: Enjoy with your choice of chipotle spread, salsa, hummus, tomato, pickles and lettuce.
