Black Bean Soup (0 points)

6 servings (1 cup)


Ingredients:

1/2 cup onion, chopped

3 tsp garlic, minced

2 medium carrots, chopped

1 tbsp ground cumin

4 tsp chili powder

1 tsp table salt

1/2 tsp black pepper

2, 14 oz black beans, drained and rinsed

3 1/2 cups fat free chicken broth



Directions:

Spray a soup pot. Sauté the onions, garlic and carrot until a little softened.

Add in your spices and stir.

Add your black beans and stir a few minutes warming up the beans.

Add your stock. Let come to a boil and then simmer for 15 minutes.

Using an immersion blender, hand mixer or a regular blender blitz the soup until you get the texture you want.


Suggested Serving: Serve with a squeeze of lime, a dollip of plain fat free greek yogurt, sliced green onions or cilantro.
