Blackberry Peach Chia Jam (0 points)

16 servings (3 tbsp each)


Ingredients:

3 cup blackberries

3 medium peaches, peeled, pitted and cubed

1/4 cup splenda

2 tbsp fresh lemon juice

6 tbsp chia seeds


Directions:

In a medium saucepan over medium heat, combine the blackberries, cubed peaches, splenda and lemon juice.

Heat up until boiling, mashing the fruit with a fork, for a couple of minutes.

Add the chia seeds and stir at once. Remove the saucepan from the heat and let the jam set for about 5 minutes to thicken.

Cool and transfer to an airtight container and refridgerate for up to 2 weeks.


Suggested Serving: Serve on toast, bagels, pancakes, waffles, cheesecakes, muffins or in yogurt.
