4 servings (2 tbsp each)
Ingredients:
34 gm blue cheese
1/2 cup plain fat free greek yogurt
1 tbsp fresh lemon juice
1 tsp dried parsley
Directions:
Using a fork, mash the blue cheese in a small bowl.
Mix in remaining ingredients. Season to taste with salt and pepper.
Let stand 30 minutes to allow flavours to develop.
Cover and refrigerate any leftovers.
Can be used as a dip or dressing on vegetables or meat.
