Blueberry Cookies (1 point)

Ingredients:

1 cup rolled oats

3/4 cup kodiak mix

1/4 cup splenda

1 1/2 tsp baking powder

1 1/2 tsp ground cinnamon

1/4 tsp table salt

1 egg

1/4 cup unsweetened almond milk

2 tbsp unsweetened applesauce

1 tsp vanilla extract

1/2 cup fresh blueberries. or frozen


Directions:

Preheat the oven to 325F. Prepare a 12 well whoppie pie pan by lightly spraying 10 wells with oil. Set aside.

In a blender, combine the oats, kodiak mix, splenda, baking powder, cinnamon and salt. Pulse a couple of times to slightly break down the oats. Set aside.

In a medium bowl, whisk together the egg, milk, applesauce and vanilla.

Add the dry ingredients to the wet and mix until combined.

Add the blueberries and gently mix in.

Divide the cookie dough evenly (about 2 tbsp) into each well.

Using moist fingers, gently spread the dough to fill the well.

Bake for 10-12 minutes. Let cool for 10 minutes before removing.
