4 servings (1/4 frittata each)
Ingredients:
1 oz red bell pepper, chopped
1 oz onion, chopped
1 tsp minced garlic
6 oz cooked broccoli, chopped
4 oz pressed cottage cheese, cubed or crumbled
4 large eggs
2 oz shredded parmesan cheese
1/2 tbsp greek seasoning
Directions:
Preheat oven to 350F.
Add the bell peppers, onions and minced garlic to a sprayed 9" pan or pie plate.
Add the cooked broccoli and cottage cheese. Set aside.
Whisk up the eggs and pour over the veggies and cottage cheese mixture.
Sprinkle the parmesan cheese on top. Then sprinkle on the greek seasoning.
Bake for 30 minutes or until golden brown and cooked through.
Suggested Serving: Serve with a side salad of roasted vegetables or a salad.
