6 servings (2 pancakes each)
Ingredients:
7 oz (1/2 pkg) cole slaw mix
10 medium cooked shrimp, chopped
6 tbsp kodiak mix
1/3 cup whole grain corn meal
1 large egg
1/2 cup vegetable broth
Directions:
In a medium mixing bowl, mix all the ingredients until just combined.
Heat a large sprayed skillet on medium high heat.
Fry large spoonfuls (2 tbsp) till cooked through and golden, flipping once.
Suggested Serving: Serve with wasabi yogurt sauce (see recipe).
