Carrot Cake (1 point)

Ingredients:

1 1/3 cups carrots, grated

1/2 cup unsweetened applesauce

1/2 cup crushed pineapple, drained

2 eggs

1 tsp vanilla extract

17 tbsp kodiak mix

5 tbsp splenda

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground nutmeg

1/8 tsp ground cloves


Directions:

Preheat oven to 350F. Spray an 8"x 8" baking pan.

Add the grated carrot, applesauce, pineapple, eggs and vanilla to a large bowl. Mix together until combined. Set aside.

To a medium bowl, add the kodiak mix, splenda, baking powder, baking soda and spices. Mix to combine.

Add the dry ingredients to the wet ingredients and mix only until combined.

Pour batter into a prepared pan. Bake for 30-35 minutes or until an inserted toothpick comes out clean.

Hi Ann-Marie! The frosting was just a 1/4 cup strained plain fat free greek yogurt plus 1 tsp cheesecake pudding powder plus a splash of vanilla extract.
