Ingredients:
1 cup uncooked rolled oats
3/4 cup kodiak mix
1/4 cup splenda
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp table salt
3/4 cup uncooked carrot, grated
1 egg
3 tbsp unsweetened applesauce
1 tsp vanilla extract
Directions:
Preheat oven to 325F. Prepare a baking sheet by lining with parchment paper. Lightly spray with oil and set aside.
In a medium bowl, combine the oats, kodiak mix, splenda, baking powder, cinnamon and salt. Set aside.
In another bowl, combine the grated carrot, egg, applesauce and vanilla.
Mix the dry ingredients into the wet ingredients until combined.
Divide the batter into 12 even mounds (heaping tbsp). Press down slightly. Bake for 12-15 minutes.
