Cauliflower Parmesan (2 points)

Ingredients:

1 small head cauliflower, cut in 1" horizontal slice

1 cup canned tomato sauce

4 tsps italian seasoning

4 tbsp light grated parmesan cheese

75 gm light mozarella cheese, shredded


Directions:

Microwave the cauliflower in a covered shallow dish, with 1" water, until cauliflower is almost cooked, about 6-8 minutes.

Drain the cauliflower slices and place on a lightly sprayed baking pan.

Spoon about 1/4 cup tomato sauce on each slice and sprinkle each with a tsp of italian seasoning.

Divide the light grated parmesan first and then the shredded light mozzarella next over the top.

Broil the cauliflower in the oven until the cheese is bubbly and golden.


Suggested Serving: Yummy side dish for baked fish.
