4 servings (1/2 cup each)
Ingredients:
2 cups uncooked cauliflower, riced
1 tsp minced garlic
1/4 cup uncooked carrots, diced
1/4 cup uncooked celery, diced
1 tsp dried parsley
1 tsp lemon zest
1 tbsp lemon juice
Directions:
Heat a large lightly sprayed skillet over medium high heat. Add riced cauliflower and cook for 3 minutes, stirring frequently.
Stir in garlic and vegetables. Cook for a few more minutes until vegetables are tender.
Remove the pan from heat, stir in parsley, lemon zest and juice. Season and serve.
Suggested Serving: Quick and excellent side dish.
How do you 'rice' uncooked cauliflower? If I cook it first I can put it through a ricer, but it won't work unless it's cooked.
