6 servings (1 1/2 cups)
Ingredients:
1/2 uncooked onion, chopped
1 cup uncooked carrots, chopped
1 cup uncooked celery, chopped
1 tsp garlic, minced
1 tsp dried parsley
1 tsp dried thyme
1 tsp table salt
1/2 tsp black pepper
5 cups fat free chicken broth
2 cooked chicken breasts, cubed
1 can palmini rice, rinsed
Directions:
In a large sprayed soup pot, add the onion, carrots and celery. Cook and stir for 3-4 minutes, until onion turns golden.
Add garlic, parsley and thyme and cook for 1 minute.
Add the salt, pepper, broth, chicken and the palmini rice.
Stir and bring to a boil over medium high heat.
Reduce heat to medium low, cover and cook for 30 minutes or until the vegetables are tender.
You could also make this by adding all the ingredients into a slow cooker and cooking it for 6-8 hours on low or 2-4 hours on high.
