Chicken Dumpling Salad (3 points)

4 servings (6 wontons + heaping 1/2 cup salad)


Ingredients:

24 cj bibigo chicken & vegetable wontons

1/3 cup rice wine vinegar

2 tbsp soy sauce

2 tsp sesame oil

1 tsp minced garlic

1 tsp minced ginger

3 cups uncooked cabbage, shredded

2 stalks celery, sliced

1 medium carrot, grated

1/3 cup red onion, sliced

1 large scallion, sliced


Directions:

Cook the chicken and vegetable wontons by boiling then until soft and then pan frying them in a lightly sprayed skillet until browned on both sides. Set aside.

Make the dressing by combining the vinegar, soy sauce, oil, garlic and ginger. Set aside.

To a large bowl, add the cabbage, celery, carrots, red and green onions. Mix until combined.

Add the wontons, then the dressing. Mix to combine and serve.


Suggested Serving: Serve with additional sliced green onion, sliced almonds and a sprinkle of sesame seeds.
