Chicken Hummus Bowls (0 points)

Ingredients:

8 oz chicken breast, cut into 1" cubes

1 tsp greek seasoning

1/2 tsp ground cumin

1/2 tsp paprika

1/8 tsp cayenne pepper

1 tsp minced garlic

1 tbsp fresh lemon juice


Directions:

Position rack in upper third of oven; preheat broiler to high. Line a baking sheet with foil. Spray lightly with oil. Set aside.

Toss chicken with greek seasoning, cumin, paprika and cayenne pepper. Spread on prepared pan. Broil until just cooked through, 5-7 minutes.

Meanwhile, combine garlic and lemon juice in a medium bowl. Add the cooked chicken and stir. Let sit for 5 minutes, storing occasionally.

Meanwhile prepare 2 bowls, adding 1/2 cup of prepared hummus (see recipe) into each. Top with cooked chicken, chopped cucumber, tomato, red onion, light feta cheese, olives and a squeeze of lemon.


Suggested Serving: Serve with pita chips.
