Ingredients:
1 pound ground chicken breast
1/2 cup onion, finely chopped
2 tsp minced garlic
1 tsp ground cumin
1/2 tsp ground coriander
1 tsp dried mint
1 tsp dried parsley
1/2 tsp table salt
1/2 tsp black pepper
Directions :
Preheat oven to 400F. Line a baking sheet with foil and lightly spray with oil. Set aside.
Combine all the ingredients together and mix well.
Using wet hands, form into small footballs, around an inch thick in the middle.
Spray a large skillet and heat on high heat. Add the kofta balls to the pan and sear on each side until browned.
Place them onto the prepared baking sheet and bake for about 15 minutes or until cooked through.
Suggested Serving: Serve, halved on a pita with lettuce, onion, tomato, cucumber, crumbled feta and lemon dilly yogurt sauce.
