Ingredients :
1 pound ground chicken breast
1/4 cup dried bread crumbs
1 egg
2 tbsp plain unsweetened almond milk
1/2 small red pepper, diced
1/2 small onion, diced
1 medium uncooked carrot, diced
1 medium uncooked celery, diced
2 tsp minced garlic
1/2 tbsp italian seasoning
1/2 tbsp worcestershire sauce
1/2 tbsp balsamic vinegar
1 tsp table salt
1/2 tsp black pepper
3 tbsp spicy ketchup
1 tsp mustard
Directions:
Preheat oven to 350F. Prepare a baking sheet by lining it with tin foil and lightly spraying bit with oil. Set aside.
Combine the ground chicken, breadcrumbs, egg and milk in a large bowl. Set aside.
Add the diced red pepper, onion, carrot and celery to the bowl. Instead of dicing the vegetables, you could add the onion, carrot and celery chunks to a blender and process until the vegetables are fine.
Add the rest of the ingredients except for the ketchup and mustard to the bowl. Mix very well, using your hands.
Form into a loaf shape (8"x 4") on the prepared pan.
In a small bowl, combine the ketchup and mustard. Spoon the mixture all over the top of the meatloaf.
Bake uncovered for 35-40 minutes or until the internal temperature is 165F.
Let it stand for 10 minutes before slicing and serving.
I made these tonight for dinner. So easy to make and absolutely delicious. I will be making it again for sure.
