6 servings (heaping 1/2 cup)
Ingredients:
1 cup chicken broth
1/4 cup soy sauce
1 tbsp cornstarch
1 tsp chili garlic sauce
1 pound chicken breast, sliced
1/2 cup snow peas
1/2 cup carrots, sliced
1/2 cup onion, sliced
1/2 cup mushrooms, sliced
1 tsp garlic, minced
1 tsp ginger, minced
Directions:
In a large bowl, whisk together chicken broth, soy sauce, cornstarch and chili garlic sauce. Add the sliced chicken breast to the bowl and marinate at least 10 minutes.
Drain the chicken but reserve the marinade. Heat a large skillet or wok on medium high heat. Spray with oil. When pan is hot, stir fry the chicken until cooked through, about 5 minutes.
Remove the chicken to a plate. Spray the skillet or pan and add the snow peas, carrots, onion and mushrooms. Stir fry for 3 minutes. Add the ginger and garlic. Stir fry for another minute.
Return the chicken, mix together. Stir in the marinade and heat until mixture thickens, about 3 minutes.
Suggested Serving: Serve over fried cauliflower rice.
