Chicken Taco Skillet ( 0 points)

6 servings (1 cup each)


Ingredients:

1/2 cup uncooked onion, chopped

1 pound ground chicken breast

1 oz taco seasoning, divided

2 cups cooked cauliflower rice

1 cup canned black beans, drained, rinsed

1/2 cup salsa

1/4 cup canned tomato sauce


Directions:

Spray a large saute pan and heat over medium high heat.

Add the onion and cook for a couple of minutes until softened.

Add the ground chicken breast and sprinkle with 1 tbsp of the taco seasoning.

Cook the chicken and onion mixture for 5-6 minutes, stirring every couple of minutes.

Add the rest of the taco seasoning, the cauliflower rice, the black beans, the salsa and the tomato sauce. Stir to mix.

Simmer uncovered until mixture is heated through.


Suggested Serving: Serve with light shredded cheese, plain fat free greek yogurt, salsa, chopped tomatoes and sliced green onions.
