Chickpea Waffles (1 point)

5 servings (1 waffle each)


Ingredients:

1/2 cup canned chickpeas, drained and rinsed

1 large egg

1 egg white

1/3 cup rolled oats

1/4 cup unsweetened almond milk

3/4 tsp baking powder

1 pinch table salt

5 tsp date powder


Directions:

In a blender, add all the ingredients for the batter. Blend on high until a smooth batter forms. Let sit for 5-10 minutes to thicken slightly.

Heat up the waffle iron and lightly spray it with oil. I use a mini waffle iron.

Add about 2 tbsp of batter to the waffle iron when ready.

Repeat until batter is gone. You should get at least 4 waffles.


You can also make these into pancakes cooking them in a lightly sprayed skillet on medium high, about 2 minutes per side.


Variations:

Savoury - leave out the date powder and add in 1/2 tsp garlic powder and 1/4 tsp of ground cumin. You should get at least 4 waffles at 0 points each.


Chocolate - add in 2 tbsp of date powder and 2 tbsp unsweetened cocoa powder. Thin with a splash of unsweetened almond milk. You should get 5 waffles at 1 point each.
