Ingredients:
1/2 cup rolled oats
1/2 cup kodiak mix
4 tbsp date powder
1/2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp table salt
1/4 cup unsweetened applesauce
1/4 tsp vanilla extract
Directions:
Preheat oven to 375F. Prepare a cookie sheet by spraying it lightly with oil. Set aside.
To a medium mixing bowl, add the oats, kodiak mix, date powder, cinnamon, baking soda and salt together. Mix well.
Add applesauce and vanilla to the dry ingredients and mix really well.
Divide the dough, evenly, into 7 mounds.
Spread the mixture, flatten and shape with wet fingers.
Bake 8-10 minutes. Let them cool a few minutes before moving.
Variations:
Cinnamon Roll - leave out the chocolate chips and add 1/2 tsp ground cinnamon. Divide the dough evenly into 6 mounds. Add the cinnamon swirl (see recipe) prior to baking. Each cookie is 2 points.
Chocolate - add 2 tbsp unsweetened cocoa. Each cookie is 2 points.
Cranberry - add 1/4 cup sugar reduced craisins. Each cookie is 3 points.
Chocolate Chip - add 15g mini chocolate chips. Each cookie is 3 points.
Double Chocolate - add 2 tbsp unsweetened cocoa + 15g mini chocolate chips. Each cookie is 3 points.
Mexican Chocolate - add 2 tbsp unsweetened cocoa + another 1/2 tsp ground cinnamon + 1/4 tsp ground cayenne pepper + 15g mini chocolate chips. Each cookie is 3 points.
Raisin - add 1/4 cup of raisins. Each cookie is 3 points.
How many cookies does this make? It says 5 servings, but also says divide into 7? Can't wait to make them!
Making these…I don’t have whoopie pie pan…can I just bake them on parchment lined cookie sheet?
