Ingredients:
1/2 cup rolled oats
1/2 cup kodiak mix
4 tbsp splenda
1/2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp table salt
1/4 cup unsweetened applesauce
1/4 tsp vanilla extract
Directions:
Preheat oven to 375F. Prepare a cookie sheet by spraying it lightly with oil. Set aside.
Add the oats, kodiak mix, splenda, cinnamon, baking soda and salt together. Mix well.
Add applesauce and vanilla to the dry ingredients and mix really well.
Divide the dough evenly into 7 mounds.
Spread the mixture, flatten and shape with wet fingers.
Bake 8-10 minutes. Let them cool a few minutes before moving.
Completely cool before storing them in a covered container in the refrigerator or wrapped in the freezer.
Variations:
Cinnamon Roll - leave out the chocolate chips and add 1/2 tsp ground cinnamon. Divide the dough evenly into 6 mounds. Add the cinnamon swirl (see recipe) prior to baking. Each cookie is 1 point.
Chocolate - add 2 tbsp unsweetened cocoa. Each cookie is 1 point.
Cranberry - add 1/4 cup sugar reduced craisins. Each cookie is 2 points.
Chocolate Chip - add 1/4 cup lily's chocolate chips. Each cookie is 2 points.
Double Chocolate - add 2 tbsp unsweetened cocoa and 1/4 cup lily's chocolate chips. Each cookie is 2 points.
Raisin - add 1/4 cup of raisins. Each cookie is 2 points.
Making these…I don’t have whoopie pie pan…can I just bake them on parchment lined cookie sheet?
