Ingredients:
2 chicken breasts, bite size pieces
1 tsp chili powder
2 tsp dried cilantro
1/4 medium red onion, sliced
1/4 medium red pepper, sliced
1 cup cauliflower rice
1/2 cup cherry tomatoes, chopped
1 cup peas
Directions:
Toss chicken with chili powder. Heat a large sprayed skillet on medium high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, 6-8 minutes. Transfer chicken to a clean bowl and let cool slightly. Toss with cilantro and set aside.
Lightly spray skillet, add the onion and red pepper. Cook over medium heat, stirring occasionally, until the vegetables have softened and are beginning to brown, 6-8 minutes.
Combine the cauliflower rice and chopped tomatoes.
Assemble the bowls by evenly dividing the chicken, onion and peppers, cauliflower rice and tomatoes, and the green peas.
Bowls can be eaten cold or heated up in the microwave on High for 1-2 minutes.
Suggested Serving: Serve with sliced green onions, salsa, cilantro yogurt sauce (see recipe) and squeeze of lime.
