Ingredients:
2 medium bananas, ripe and mashed
2 eggs
2/3 cup unsweetened applesauce, divided
1 tsp vanilla extract
1 1/4 cups kodiak mix
3/4 cups splenda, divided
3 tsp ground cinnamon, divided
1 tsp baking powder
1/4 tsp table salt
1 tsp unsweetened cocoa
Directions:
Preheat oven to 350F. Spray an 8" square pan. Set aside.
Mix the bananas with a mixer until they are mashed.
Add the eggs, 1/3 cup applesauce and vanilla. Mix together. Set aside.
In a separate bowl, mix together the kodiak mix, 1/2 cup splenda, 1 tsp ground cinnamon, baking powder and salt.
Add the dry ingredients to the wet ingredients and mix until incorporated.
Pour batter into the prepared pan and smooth the top. Set aside.
In a small bowl combine 1/3 cup of applesauce, 1/4 cup splenda, 2 tsp ground cinnamon, and cocoa. Mix. Drop by tablespoons full all over the top of the cake batter. Swirl in with a knife.
Bake for 30-35 minutes or until the toothpick poked in the center comes out clean.
Cool completely before slicing and eating.
