4 servings (2 small pancakes)
Ingredients:
1/2 cup kodiak mix
1 tsp baking powder
1 tsp ground cinnamon
2 large eggs
1/2 cup almond milk
1 tsp vanilla extract
Directions:
Add the kodiak mix, baking powder and cinnamon to a small bowl. Mix together and set aside.
In another small bowl, whisk together the eggs, milk and vanilla. Add the wet ingredients to the dry and mix until just combined.
Heat up a sprayed skillet or griddle and when ready, pour in 2 tbsp of the pancake batter.
Cook until bubbles appear and gently flip pancake.
Repeat with remaining batter. You should get about 8 pancakes.
Pipe a thin line of cinnamon swirl (see recipe) before eating.
Suggested Serving: Serve with cheesecake glaze or pancake syrup and fruit.
