Ingredients:
1 banana, peeled and ripe
1/2 cup fat free cottage cheese
1 egg
1/4 cup unsweetened almond milk
1/4 tsp vanilla extract
1 cup quick oats
10g vanilla protein powder
40g 85% dark chocolate, chopped
Directions:
Preheat the oven to 350F. Prepare a baking sheet by lightly spraying it with oil. Set aside.
Blend the banana, cottage cheese, egg, milk and vanilla until the cottage cheese is broken down. Set aside.
In a medium bowl, combine the oats, protein powder and baking powder. Add the banana mixture and mix until combined.
Fold in the chopped chocolate. Divide the batter into 9 equal portions.
Roll into balls (using wet hands) and place on the baking sheet. Press down to flatten.
Bake for 12-15 minutes or until golden brown and cooked through.
