4 servings (2 pancakes each)
Ingredients:
1/2 cup old fashioned oats
1/2 tsp baking powder
1/8 tsp table salt
1/2 cup fat free cottage cheese
2 eggs
1/2 tsp vanilla extract
Directions:
Place all the ingredients into a blender and process on high speed until well combined, about 30 seconds.
Heat either a large nonstick frying pan over medium heat or a dash mini pancake grill. Spray lightly with oil.
Add the batter in 2 tbsp portions. Cook until the pancakes are set around the edges and golden brown, 2-3 minutes, flipping to brown on the other side for 1-2 minutes.
Repeat with the remaining batter until gone.
Suggested Serving: Serve with no added sugar pancake syrup, fruit or jam.
These are fantastic!! It's my new cottage cheese go to recipe. I make up a bunch and put them in the fridge. They're a great grab-n-go protein snack when I'm hungry.
