Cranberry Chicken Salad (1 personal point)

Ingredients:

1 can Kirkland chicken breast, drained and shredded

2 tbsp uncooked celery, diced

2 tbsp uncooked carrots, diced

1 medium scallion, sliced

1 sandwich slice dill pickle, diced

27 g (1/4 cup) reduced sugar craisins

3 tbsp pepitas

3 tbsp plain fat free greek yogurt

1 tbsp lemon juice

1 tsp dijon mustard


Directions:

Combine all the ingredients in a medium bowl.

Stir to coat. Cover and store in the refrigerator.


Suggested Serving: Great on it's own, on greens or in a sandwich or wrap.
