Cucumber Edamame Salad (0 points)

3 servings (1/2 cup each)


Ingredients:

1 medium english cucumbers, spiralized or thinly sliced

1/2 cup shelled edamame

4 rings banana peppers, chopped

1 tbsp rice wine vinegar

1 tsp sesame oil

1 tsp soy sauce

1/2 tsp ginger, paste

1/2 tsp garlic, minced

1 pinch red pepper flakes


Directions:

Toss together cucumbers, edamame and chopped banana peppers in a medium bowl. Set aside.

In a small bowl, add the rest of the ingredients and whisk well.

Pour the dressing into the cucumber mixture and toss well.

Cover and refrigerate for at least 2 hours.
