Double Chocolate Bran Muffins (3 points)

6 servings (1 muffin each)
Ingredients:
1 cup bran buds
1 cup uncooked quick oats
2 tbsp unsweetened cocoa powder
1 tbsp date powder
1/2 tsp baking powder
1 medium banana, ripe
3/4 cup unsweetened almond milk
1 egg
1/2 tsp vanilla extract
35g 85% dark chocolate, chopped
Directions:
Preheat the oven to 350F. Prepare 6 wells of a 12 well muffin tin by lightly spraying with oil or lining with muffin baking cups. Set aside.
In a medium bowl combine the buds, oats, cocoa, date and baking powder. Set aside.
Blend up the banana, milk, egg and vanilla.
Add the wet ingredients to the dry ingredients, mix and let sit for 10 minutes. Add the chocolate and mix.
Divide the batter, evenly, into the prepared pan.
Bake for 20-25 minutes or until cooked through.
