Easy Refried Beans (0 points)

4 servings (1/3 cup)


Ingredients:

1/4 cup uncooked onions, finely chopped

1/8 tsp table salt

1 large clove garlic, minced

1/4 tsp chili powder

1/8 tsp ground cumin

1 1/2 cups canned pinto beans, drained and rinsed

1/3 cup water

1/2 tbsp fresh lime juice


Directions:

In a sprayed medium saucepan over medium heat, add onion and salt. Cook, stirring occasionally, until the onions have softened and are turning translucent, about 5-7 minutes.

Add the garlic, chili powder and cumin. Cook, stirring constantly, about 30 seconds. Pour in the drained beans and water. Stir, cover and cook for 5 minutes.

Reduce heat to low and remove the lid. Use a potato masher or a fork to mash at least half of the beans until you reach your desired consistency. Continue to cook the beans, uncovered, stirring often, for 3 more minutes.

Remove the saucepan and stir in lime juice.


Suggested Serving: Excellent side dish.
