Easy Rice Pilaf (3 points)

4 servings (1/4 mixture each)


Ingredients:

1 cup fat free chicken broth

1/2 cup uncooked white rice, rinsed

1 cup frozen mixed vegetables, thawed


Directions:

Heat up the broth, in a medium saucepan, on high heat.

Add the rice to the boiling broth, cover and turn down to simmer.

After 15 minutes, add your mixed vegetables, stir, cover and continue cooking until rice is completely cooked, about 3-5 more minutes.


Suggested Serving: Excellent side dish.
