French Toast Bake (1 personal point)

Ingredients:

4 eggs

1 cup unsweetened almond milk

3 tbsp splenda, divided

1 tsp ground cinnamon, divided

1/2 tsp vanilla

1/4 cup applesauce

1/2 tsp unsweetened cocoa

1 pinch table salt

5 slices of 1 point bread




Directions:

Preheat oven to 350F.

In a large bowl add; eggs, milk, 1 tbsp splenda, 1/2 tsp cinnamon and vanilla. Mix well. Set aside.

Slice bread into 1" cubes. Leave the crusts on.

Spray an 8"x 8" square pan or a 9" round pan. Layer the bread cubes in the pan.

Pour the egg mixture evenly over the bread cubes.

In another bowl mix the applesauce, 2 tbsp splenda, 1/2 tsp cinnamon, 1/2 tsp cocoa and salt.

Drizzle or drop mixture by spoonful's all over the casserole.

Bake the casserole for 40-45 minutes. Remove from oven and let set for about 10 minutes before serving.
