Ingredients:
1 egg
1 green onion, sliced
1/2 cup peas (edamame or mixed vegetables)
2 cups riced cauliflower
2 tbsp soy sauce
Directions:
Heat a large skillet to a medium high heat.
Spray with cooking oil. Crack an egg into the hot pan. Scramble the egg.
Add the sliced green onion and saute until egg is cooked.
Add the vegetables and riced cauliflower.
Add the soy sauce and toss everything together and cook for 2-3 minutes.
Suggested Serving: Garnish with sliced green onions and toasted sesame seeds.
