Fruit Compote (1 point)

10 servings (0.4 cup each)


Ingredients:

3 cups unsweetened fruit, fresh or frozen

1/3 cup water

7 tbsp date powder


Directions:

Prepare the fruit, chop if large (rhubarb/apples) or leave it whole if small (berries). If using frozen fruitt, no need to defrost.

Add the fruit, water and date powder to a medium saucepan. Bring to a boil, over medium high heat, stirring occasionally, for about 10 minutes.

Reduce the heat to medium. Mash the fruit to your desired consistency. Continue simmering, stirring often, until the compote condenses, another 5-10 minutes.


Suggested Serving: Serve as a fruit crisp (see fruit crisp topping recipe), with yogurt, on pancakes and oatmeal or on it's own.
