Fruit & Fibre Breakfast Salad (1 point)

2 servings (1/2 mixture each)


Ingredients:

2 cups coleslaw mix

1/2 cup butter beans, drained and rinsed

1/2 cup unsweetened canned pears, chopped

1/2 cup apple, chopped

1/3 cup fresh blueberries

1 1/3 tbsp dried dates, diced

1 3/4 tbsp fresh orange juice

1 tsp apple cider vinegar

1 tsp date syrup

1/2 tsp dijon mustard

1/4 tsp paprika


Directions:

Add the coleslaw mix, beans, pears, apples, blueberries and dates. Mix. Set aside.

Whisk together the rest of the ingredients to make the dressing. Pour over the salad and toss to mix.

Chill for at least 30 minutes before serving.
