2 servings (1 filet + 1 cup roasted vegetables)
Ingredients:
2 uncooked salmon filets
2 cups uncooked mixed vegetables, non starchy
1/2 cup fat free chicken broth
1/2 lemon, juice only
2 tsp minced garlic
1 tsp italian seasoning
Directions:
Preheat oven to 375F. Prepare a baking sheet by lining it with aluminum foil and lightly spraying it with oil. Set aside.
Prepare vegetables by cutting into bite size pieces. Microwave for a few minutes, 2-3, to soften them. Set aside.
Place the fish (room temperature) on the pan, add the vegetables. Set aside.
Combine the chicken broth, lemon juice, garlic and italian seasoning and drizzle all over the salmon and vegetables.
Bake for 15-18 minutes, depending on the thickness of the fish.
You can add starchy vegetables to the mix, such as potatoes or parsnips, just make sure to add the points.
Suggested Serving: Serve with a squeeze of fresh lemon.
