Gingerbread Cookies (1 point)

Ingredients:

1/2 cup uncooked rolled oats

1/2 cup kodiak mix

1/4 cup splenda

1/4 tsp baking soda

1/4 tsp table salt

1/4 tsp ground cinnamon

1/4 tsp ground ginger

1/4 tsp ground allspice

1/8 tsp ground cloves

1/4 cup unsweetened applesauce

2 tbsp cooking molasses

1/4 tsp vanilla


Directions:

Preheat oven to 375F. Prepare a cookie sheet by spraying it lightly with oil. Set aside.

Add the oats, kodiak mix, splenda, baking soda, salt and spices together. Mix well.

Add the applesauce, molasses and vanilla to the dry ingredients and mix really well.

Divide the dough evenly into 9 mounds.

Spread the mixture, flatten and shape with wet fingers.

Bake 10-12 minutes. Let them cool a few minutes before moving.

Completely cool before storing them in a covered container in the refrigerator or wrapped in the freezer.

These are yummy! I added extra ginger to get a full ginger flavour. Next time I’ll make them smaller so filling 😊

Yes, you can have 5 rather large cookies for 2 points or 9 smaller cookies for 1 point 😊

Hi Karen…I do love ginger snap cookies, I like the heat and texture of a good dry snap. Any suggestions on how I could spice these up a bit. Perhaps rolling them thinner, more ginger ??

Yes, these are more like the soft gingerbread cookies. Hard to get a snap without sugar and butter (pointy!!!) but rolling them out thinner and baking a litter longer may help. As to increased spicy... you could increase the cloves to 1/4 tsp. I find them plenty spicy already.
