Gingerbread Pear Oatmeal Bake (1 point)

8 servings


Ingredients:

1 1/4 cups uncooked rolled oats

4 tbsp splenda

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground nutmeg

1/4 tsp ground cloves

4 large eggs

1 cup unsweetened applesauce

1 1/3 tbsp molasses

1 tsp vanilla extract

1 cup unsweetened canned pears drained and chopped


Directions:

Preheat oven to 350F. Prepare an 8"x 8" square pan by lightly spraying it with oil. Set aside.

In a medium bowl combine the oats, splenda, baking powder and spices. Set aside.

In another medium bowl whisk together the eggs, applesauce, molasses and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined.

Fold in the chopped pears and pour the batter into the prepared pan. Bake for 35-40 minutes or until golden brown and cooked through.


Suggested Serving: Serve hot, warmed up or cold with or without milk, fruit and syrup/sauce.
