Gingerbread Pear Oatmeal Bakes (1 point)

Ingredients:

2 cups uncooked oatmeal

1/4 cup splenda

1 1/2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground cloves

1/4 tsp table salt

2 large eggs

2/3 unsweetened almond milk

1/2 cup unsweetened applesauce

2/3 cup chopped pears

1 2/3 tbsp molasses


Directions:

Preheat the oven to 350F. Prepare a muffin tin by lightly spraying the 12 muffin cups with oil. Set aside.

Combine the oats, splenda, baking powder, spices and salt. Mix thoroughly until combined. Set aside.

In another bowl, whisk together the eggs, milk, applesauce and molasses.

Add the dry ingredients and stir until blended together. Stir in the chopped pears.

Spoon the batter evenly between the prepared muffin cups. Bake for 25-30 minutes or until the oatmeal is lightly browned and cooked through.

I don’t have molasses, can I just omit it? Or, what would make a good substitution?

You can substitute brown sugar, the darker the better! 😊

Yes, I used chopped canned in water pears for these 😊
