Grated Carrot and Beet Salad ( 0 points)

4 servings (1/2 cup each)


Ingredients:

2 cups grated carrot, raw

2/3 cup grated beets, raw

2 tbsp lemon juice

2 tsp no sugar added pancake syrup

1/2 tsp paprika

1/4 tsp ground cumin

1/4 tsp ground cinnamon

1 pinch of table salt

1 pinch cayenne pepper


Directions:

In a medium bowl, combine the grated carrots and beets.

Make the dressing by whisking together the rest of the ingredients.

Drizzle the dressing over the vegetables and gently fold until they are lightly coated.

Let sit at least an hour before serving.


Optional: You can add 3 tbsp of raisins and 2 tbsp of chopped mint to the salad. Be sure to adjust your points accordingly.
