4 servings (1/2 cup each)
Ingredients:
2 cups frozen green peas, thawed
3 tbsp red onion, chopped
1/3 cup plain fat free greek yogurt
2 tsp splenda
2 tsp fresh lemon juice
1/4 tsp table salt
1/8 tsp black pepper
Directions:
Add the peas and onion in a container. Mix and set aside.
Whisk together the yogurt, splenda, lemon juice, salt and pepper.
Add dressing to the peas and onions. Mix gently
Cover and refrigerate for a couple of hours before serving.
Suggested Serving: Serve on a bed of lettuce with a sprinkle of cheese and bacon bits.
