Ingredients:
1 cup spelt flour
2 tsp baking powder
1 pinch salt
3 slices rosemary ham, chopped
73 gm light tex mex cheese
2 medium scallions, sliced
1 cup plain 0% siggi's yogurt
1 large egg
1 egg white
Directions:
Preheat oven to 375F. Prepare a baking sheet by lining with parchment paper. Set aside.
In a medium bowl combine the flour, baking powder and salt. Mix well.
Add the ham, cheese and green onion. Mix together, making sure the ham, cheese and onion are well coated. Set aside.
In another medium bowl combine the yogurt and egg. Mix well.
Add the wet ingredients to the dry ingredients and mix until combined.
Knead a few times and form the dough into a 6-7" circle. Cut into 6 triangles.
Place the triangles onto the prepared baking sheet.
Beat up an egg white and paint each triangle.
Bake for 25 minutes or until each scone is cooked through and golden brown.
Suggested Serving: Serve with soup, salad, stews, chili or all on it's own.
I made some today for my partner and had a "test" one out for myself. They are amazing!
