Hawaiian Roasted Vegetables (2 points)

4 servings (1/4 serving)


Ingredients:

8 oz uncooked broccoli, cut into florets

8 oz uncooked carrots, sliced

4 oz uncooked bell peppers, chopped

4 oz uncooked red onion, chopped

24 oz uncooked pineapple, chunks

2 tbsp olive oil

1 tsp minced ginger

1 tsp minced garlic


Directions:

Preheat oven to 400F. Prepare a baking sheet by lining it with foil. Set aside.

In a large bowl, combine the broccoli, carrots, peppers, onions and pineapple. Set aside.

In a smaller bowl, whisk together the olive oil, ginger and garlic. Add the olive oil mixture to the vegetable and pineapple mixture. Combine until coated evenly.

Spread the mixture evenly on the prepared baking sheet.

Bake for 20 minutes, stir and continue baking for another 10 minutes or until vegetables are cooked through.


Suggested Serving: Excellent side dish for roast pork or ham.
